4th of July Quick Potluck Dish: Tabouli Salad

One of my favorite things about the 4th of July is the FOOD! Something about bbq, salads, fruit, and dessert after a day full of fun and celebration is perfection. Many 4th of July parties are potlucks, which I both love and overthink. I will search Pinterest for hours and in a perfect world, I have time to run to the store to get all my ingredients.  However, much like a busy parent of a toddler, I do not always have time to do this. So, what’s a busy person to do?

Improvise! Look in your pantry, refrigerator, and garden for what ingredients you have. Upon a little hunting, I discovered I have all the ingredients to make Tabouli Salad.

Tabouli Salad is popular in many Mediterranean countries because it’s refreshing, hearty, and easy to make. If tabouli salad is not your speed, or you do not have bulgur on hand, replace the bulgur with quinoa, couscous, or another grain. A whole wheat pasta could also be substituted in place of the bulgur.

Another tip, use a food processor to cut up the cucumber, mint, and parsley. This will make the cut of the veggies finer, which is great if you have a picky eater on your hands. Using a food processor is handy, if, like me, you lose interested in chopping veggies quickly. 🙂

Tabouli Salad

Ingredients
  1. 3 cups water
  2. 2 tsp. salt
  3. 2 cups bulgur wheat
  4. 2 cloves garlic
  5. ¼ cup olive oil
  6. 1 medium cucumber, chopped
  7. 2 medium tomatoes
  8. 1 (packed) cup of parsley, chopped
  9. ½ cup fresh mint, chopped
  10. 2 medium lemons
Instructions
  1. Put water and salt into a medium pot and bring to a roiling boil.
  2. Once water and salt boil, turn off heat, and add bulgur. Stir and cover with lid.
  3. Let set for 20 minutes until all water is absorbed or bulgur is tender.
  4. While bulgur is sitting, put olive oil and garlic in a small bowl. Set aside. This will enhance the flavors of garlic and oil.
  5. Once the bulgur is tender (or water is absorbed) add olive oil and garlic. Stir until olive oil and garlic are mixed together with bulgur.
  6. Add chopped cucumber, tomato, parsley, and fresh mint. Stir until all the ingredients are mixed together well.
  7. Squeeze lemon juice into tabouli salad. Watch for seeds and pick out any that fall in. Mix lemon juice throughout salad.
  8. Put salad in the fridge for three hours. Served chilled.

Tabouli salad makes the perfect addition to any potluck for children and adults. It is great with grilled chicken, hummus, and even a green salad. Tabouli salad also can be made ahead as it will be kept for several days.

  1. I love this! I make a similar version with marinated artichokes added and couscous instead of bulgur. Yum!
