Toddler and Halloween Friendly: Kidney Bean, Chicken, and Sweet Potato Crockpot Soup

Halloween is around the corner and with all the last minute details making dinner can get lost in the shuffle especially on the October 31st. Having a meal you can throw in the crockpot and leave while you finish up Halloween details can be a lifesaver. Equally, important is having a healthy and filling meal before a night of trick or treating.

 Why do I love this Soup?

I came across the recipe on the Cookin For My Captain blog and knew it I had to share it. It does double duty as a great meal for Halloween night that all your goblins, ghouls, and little witches will love!

Kidney Bean, Chicken, and Sweet Potato Soup will keep bellies warm and full for you and your family.

Kidney Beans are packed full of fiber, which keeps you full and helps the blood sugar stay balanced. This is important for any indulgences in candy or sugar because it will help keep the blood sugar spiking and dropping.

Chicken is full protein, which when combine with complex carbs (sweet potatoes) creates a perfect meal that keeps energy up even when running all over the neighborhood.

Sweet Potatoes are rich in vitamins and minerals, which help keep the immune system strong. This is essential during the colder months when adults and kids are often inside and closer together sharing more than just hot coco. Also, on Halloween kids are often excited and enjoying themselves, which can lead to more exposure to germs (i.e. unwashed hands rubbing mouths, noses, or eyes).

Another reason this soup is great is that it is versatile. If you don’t eat meat, then you can switch out the chicken for quinoa, bulgur, or add black beans.  Not a fan of beans? Add more veggies. Lastly, this recipe is a little spicy, which can be skipped by using two cans of regular diced tomatoes instead of one can with green chilies.

Fall Inspired Slow Cooker Soup
Serves 6

  1. 2 (15 oz.) cans of kidney beans, rinsed and drained
  2. 4 cups of Sweet Potatoes, peeled and cubed
  3. 8 oz. of boneless, skinless chicken breasts, cut into bite-sized pieces
  4. 1 (32 oz.) carton of organic, no salt added chicken broth
  5. 2 cups of sweet peppers, chopped
  6. 1 (16 oz.) can of no-salt-added diced tomatoes with liquid
  7. 1 (16 oz.) can of no-salt-added diced tomatoes with green chilies with liquid
  8. 1 tbsp. Cajun seasoning or make your own
  9. 2 garlic cloves, minced
Optional Toppings
  1. Fresh Cilantro
  2. Plain Greek Yogurt or Sour Cream
  3. Shredded Cheese
  1. In a slow cooker, combine beans, sweet potatoes, chicken, broth, sweet peppers, diced tomatoes (both cans), Cajun seasonings, and garlic.
  2. Cover and cook on low heat for 8 to 10 hours or high heat for 4 to 5 hours.
  3. Cooking times may vary depending on the size of your crockpot.
  4. Served with any or all toppings.
