Christmas Appetizer – Bacon Wrapped Asparagus

I would love to say that my Christmas shopping is done, but I still have to fight the crowds and pick up a few gifts this weekend.  We have an adult gift exchange at my mom and dad’s house every Christmas Eve and I’ve yet to find my gift for it, yikes!

Last year, my husband and I purchased our first house and since my dad had Christmas Day off, we invited all my immediate family over to open gifts, have dinner and have a great time spending time with one another. This year, my dad isn’t so lucky to have Christmas Day so our little party has been moved to the Friday after. I haven’t decided on the full menu yet, but I have a few appetizers that I love and are usually hits with my little nieces and non-paleo family. Asparagus doesn’t seem to be a super familiar vegetable around households but I absolutely love it! And plus, everything is better with bacon right? Just skip the creamy dip if you don’t do dairy, these are just as delicious without the dip but my nieces love anything with a dip! 🙂

Bacon Wrapped Asparagus with Creamy Jalapeño Dip

–          1 package of bacon, sliced down the middle of the pack to make about 3-3 ½ inch strips

–          Just shy of a pound of asparagus

–          Pepper

–          Sprinkle of onion powder

–          Sprinkle of garlic powder

Creamy Jalapeño Dip

–          Cup of Greek yogurt

–          Juice of half a lemon

–          ½-1 jalapeño seeded & minced (depending on how spicy you & your family likes it)

–          1/8 teaspoon Italian seasoning

–          ¼ teaspoon garlic powder

–          ¼ teaspoon onion powder

–          Salt & pepper

Preheat the oven to 350 degrees. Prep the asparagus by cleaning and cutting off about two inches from the bottom. The stems have a tendency to be woody and chewy. Take one of your slices of bacon and wrap one piece of asparagus. Wrap tightly and adhere bacon to asparagus with a toothpick if they won’t stay together. Place on a baking sheet with a wire rack so both sides of bacon can get crispy. Once all pieces of bacon are gone, sprinkle each sprig with pepper, onion powder and garlic powder. Place in oven for 30 minutes OR until bacon is crispy. If you aren’t using a wire rack, flip asparagus a couple times during baking to make sure all pieces of bacon are cooked and crispy.

While the bacon is cooking, make your creamy, delicious dip. Add yogurt and all dip ingredients into a small bowl and mix well. Place in refrigerator until asparagus spears are done.
