Toddler-Friendly Christmas Crockpot Dinner

It’s hard to believe that Christmas it less than a week away and for most people, there is a lot to do before the big day. I know I have some presents to wrap and am trying to plan out my grocery shopping for the next week. This got me thinking about what I wanted to make for Christmas Dinner. While I enjoy cooking, I know that when Christmas night rolls around I will want to relax and enjoy festivities with family. So I turn to my trusty crockpot cookbook… aka Pinterest!  I came across the Slower Cooker Lemon Garlic Chicken and loved the simplicity of the ingredients and how easy it to make.

In the original recipe, she uses a whole chicken. My crockpot is on the smaller side so whole a chicken would not fit inside. I used smaller pieces (of chicken) to fit inside. Plus, something about cleaning a chicken terrifies me!

Crockpot Lemon Garlic Chicken

  1. 3 – 4 Lemons
  2. 2 – 3 Garlic Bulbs
  3. Fresh Rosemary or other herbs
  4. Chicken with the Skin (either a whole chicken or smaller pieces)
  5. Season with salt and pepper
  1. Cut the tops off of garlic bulbs and place in the bottom of the crockpot.
  2. Next, cut the ends of the lemons off so that they sit flat on the bottom of the crockpot.
  3. Place a sprig of rosemary on top of lemons and garlic.
  4. Next place the chicken in the crockpot (if using a whole chicken, clean first).
  5. Next season chicken with salt and pepper.
  6. Add more lemon slices and rosemary sprigs to the top.
  7. Cook on low for 8 hours or on high for 4 hours.
  8. To ensure doneness, use a meat thermometer to check temperature (165 degrees F).
  1. Store leftover chicken in separate container with some juice.
  2. Garlic can be used for dips, sauces, or anything else.
