Peanut Butter Rice Crispy treats w/Chia Seeds!

One of my favorite indulgences has always been rice crispy treats! As I’ve gotten older and my taste buds have evolved I find the traditional marshmallow treat to be a little too sweet for me. After some mixing and matching I’ve finally found the perfect rice crispy treat that combines my favorite flavors with a hidden protein boost of chia seeds!

We visited the Ethel M Chocolate Factory here in Vegas while my sister was visiting and I picked up some gorgeous dark chocolate hearts.

Peanut Butter Crispies!

Peanut Butter Ingredients2 cups brown rice crisps

1/4 cup coconut oil

1/4 cup peanut butter (or almond butter if you prefer)

1/4-1/2 cup chia seeds

1 & 1/2 tbsp brown rice syrup or raw honey

1 tsp vanilla

A pinch of salt

3 tbsp dark chocolate (melted)

Directions:

Line your pan with parchment paper.

Melt coconut oil and peanut butter in a large bowl, add brown rice syrup/honey and stir.

Add the brown rice crisps and chia seeds. Mix until fully and equally coated.

Peanut butter, chia, coconut mixturePlace in the freezer or refrigerator until your desired firmness. Slice into squares.

Drizzle the melted chocolate on top, freeze for 10 mins to harden.

  7. Drizzle the melted chocolate on top, freeze 10 mins to harden.

These are best served right out out of the freezer. These are so delicious and such a fun spin on an old favorite. It’s also a great way to get your family to eat chia seeds. 🙂
