Pineapple Strawberry Mother’s Day Smoothie

For Mother’s Day, my dad would have the kids make mom breakfast in bed (and vice versa for Father’s Day) and I always remember my mom enjoying it. She would be the one being pampered for the day with the kids making breakfast, showering her with gifts and my brother and I promising not to bicker for the day (sometimes that actually happened) :-).

Nowadays, breakfast in bed for mom might be a challenge for my mom since all of us kids are moved out but I thought it would be nice to share a sweet and delicious breakfast smoothie to all you lovely moms out there. The recipe is super simple and your toddlers can help with breakfast in bed by putting everything in the blender while other delicious breakfast items are being made. Maybe you could forward this recipe to the loved ones in your life and they can treat you on Mother’s Day. Now don’t fear the spinach in this recipe. My mom is so anti “health smoothies” but I actually think she might like this one. The strawberries and pineapple add a delicious sweet and tropical flavor that is perfect for a warm spring day (or hot, it may reach 100 this weekend in Las Vegas). I added maca powder and chia seeds for an added nutrition boost of fiber, minerals and vitamins but feel free to leave them out if you don’t have them on hand. Mothers Day Breakfast Smoothie

Pineapple Strawberry Breakfast Smoothie

-1/2 cup coconut water

-1/2 cup unsweetened almond milk

-1/2 banana

-1/2 cup diced pineapple

-1/2 cup strawberries

-1 handful of fresh spinach (or 1/2 cup frozen spinach)

-1 teaspoon maca powder (adds a slight butterscotch taste)

-1 tablespoon chia seeds

-handful of ice (if not using frozen fruits)

Add ingredients to your blender starting with the water then following the list above and blend until smooth. I used mostly frozen fruits so I needed the full cup of liquid to blend but if you have a fancy pants Vitamix or Blendtec, you may not need as much. Hopefully, I’ll be splurging soon and picking up a professional blender for more delicious smoothies. If you didn’t use frozen fruit, be sure to add the handful of ice to make it cold and even more refreshing! Mother's Day Breakfast Smoothie
