Lazy Woman’s Paleo Pot Roast

The summer heat has arrived in Las Vegas and while I enjoy spending time BBQing with family and lounging by the pool, I’m always looking for healthy & delicious meals that don’t involve turning on the oven. This easy slow cooker meal can be customized to utilize a tougher cut of meat that you find on sale in the store and using your toddler’s favorite vegetables. I love stew and soup type dishes but my husband always wants a more filling meal so the chuck roast combined with tons of veggies and sweet potatoes actually filled the bill this week. My husband actually said it was “excellent” which might have been a first with my slow cooker meals. This simple recipe is full of flavor and super easy to whip together and throw in the slow cooker before heading out for the day. Lazy Woman’s Paleo Pot Roast

-1 3-4 pound beef chuck roast, seasoned with salt & pepper

-1 14 oz can diced tomatoes

-3 large carrots, cut into 1 inch chunks

-1 medium onions, halved & sliced thin

-4 stalks celery, cut into 1 inch chunks

-3 medium sweet potatoes, peeled & cut into 1 inch chunks

-1/4 cup balsamic vinegar

-1/2 cup homemade beef broth

-2 cups water

– 3 large garlic cloves, minced

-1 teaspoon dried thyme

-3 sprigs rosemary

-2 bay leaves

-sea salt & pepper to taste

Place all vegetables, including the diced tomatoes, in the slow cooker and top with the seasoned chuck roast. You can brown the meat in a skillet before hand but the flavor (in my opinion) doesn’t make a significant difference. Add the balsamic vinegar, beef broth, water and spices to the slow cooker and sit lightly. Place the cover on the slow cooker and set for 6 to 7 hours until beef is tender. You can enjoy this alone, with one of your favorite dinner rolls or over cauliflower rice.
