Grain and Nut Free Lemon-Blueberry Scones! Toddler-Friendly!

One of the main reasons, I love the summer time is all the fresh fruit. I love to eat it fresh and use it to bake with. Lately, I have been on the hunt for healthier baking recipes and when I came across Balanced Bites Blog with a grain and nut free scones I knew I had to give them a try. And while I am not a huge fan of turning on the oven when it is hot, this recipe is so easy and quick I decided to break the rules a little.

Grain and Nut Free Scone

Grain and Nut Free Lemon Blueberry Scones

  1. 3 eggs
  2. Zest from 2 lemons
  3. ¼ cup lemon juice
  4. ¼ cup coconut (or your preferred) milk
  5. ½ teaspoon vanilla extract
  6. ¼ cup honey
  7. ½ cup of coconut flour
  8. ½ cup of tapioca starch/flour
  9. ¼ teaspoon baking soda
  10. ½ teaspoon cream of tartar
  11. ¼ teaspoon sea salt
  12. 1 cup of fresh blueberries
  1. Preheat oven to 350 degrees F.
  2. In a large bowl, combine eggs, zest from lemons, lemon juice, milk, vanilla extract, and honey. Mix until well combine.
  3. Mix in coconut flour, tapioca starch, baking soda, cream of tartar, and sea salt. Mix until dry and wet ingredients are combined. Dough should be wet and be able to be molded.
  4. Gently fold in blueberries until mix into dough.
  5. Form loose balls out of the dough and place on parchment-lined baking sheet. Press down the top of each scone to flatten them.
  6. Bake for 30 minutes or until golden brown on top.

Tips and Tricks:

To keep the scones grain and nut free, make sure you use coconut flour and milk. Although, you can use any flour and milk to make this recipe. Another bonus for using coconut flour is that it is high fiber, which supports the digestive system.

Tapioca starch is a gluten-free binding agent that helps baked goods and improves texture. It can be a substitute for arrowroot or organic cornstarch.

Scones will be a bit tart and have a light sweet taste, which makes them great for kids, toddlers, and everyone! Pair with a bit of animal and/or plant protein to make it a complete snack.
