Paleo Mango Green Smoothie

I’m probably one of the few people that loves breakfast. I either have a cup of coffee or tea within 30 minutes of waking up and then about an hour later, I eat breakfast. While I’m pretty scheduled when it comes to my morning routine, my breakfast is rarely the same thing. I like to mix it up with smoothies, eggs, leftovers from the night before, a handful of nuts and a piece of fruit or sometimes more elaborate things on the weekends.

When the summer heat hits though, I love smoothies with fresh fruit and vegetables. This is a great way to get a few servings of fruits and vegetables into you and your toddler without really noticing. Spinach is one of my “go-tos” in my morning smoothie since it adds great vitamins and minerals without having too strong of a veggie flavor. Feel free to sub in other greens like kale, Swiss chard and collard greens for the spinach. Some advice though, blanch or steam the greens to tone down the bitterness. I like my smoothies really thick and creamy, almost like a milk shake but feel free to add more or less liquid and ice to get the consistency how you like it. You can even sub in frozen fruits and vegetables (if your blender can take it) to get a less “icy” smoothie. Mango Green Smoothie

Mango Green Smoothie

-1 cup almond or coconut milk

-1 cup spinach

-1 cup diced mango

-1/2 cup strawberries

-1/2 frozen banana

-1 tablespoon chia seeds

-1/2 cup ice

Add the ingredients in the order listed to your blender and blend until creamy and you receive your desired consistency. Taste for flavor. If it isn’t sweet enough for you, add a couple dates or a teaspoon of honey. Another alternative would be to add a little apple sauce or another sweet fruit like pineapple.Mango Green Smoothie

Be prepared to become obsessed with green smoothies after you taste this. It’s so delicious and you can’t even taste the spinach. My smoothie addiction has increased due to my recent Vitamix purchase. I’m completely in love but my husband and dog aren’t as fond since it’s pretty obnoxious when it runs. My dog usually barks and then runs outside to get away from it. If you are in the market for a new blender, I’d definitely recommend checking out the Vitamix. The noise isn’t so bad and you can literally pulverize anything you throw into it. Score!
