Shrimp, Sausage, and Veggie One Pan Dinner. Toddler-Friendly!

Around Beanster’s Bytes, we have been gearing up for Lily’s 3rd birthday, which means lots of prep and not a lot of time for anything else. This can lead to throwing together a dinner or ordering out. I got you covered with this quick, one pan, and yummy dinner I found on the Paleo Newbie Recipes.

Shrimp and Sausage Dinner

Shrimp, Sausage, and Veggie One Pan Dinner

Ingredients
  1. 1 pound of wild caught shrimp (cleaned and deveined)
  2. 2 tbsp. of olive or coconut
  3. 1 small yellow onion, sliced
  4. 1 green bell pepper, sliced
  5. 1 red bell pepper, sliced
  6. 1 medium zucchini, sliced
  7. 6oz to 12oz of pre-cooked sausage
  8. 2 cloves of crushed garlic
  9. ½ cup of chicken stock
  10. Salt, pepper, red pepper flakes, or other seasoning.
Instructions
  1. Prep shrimp, sausage, and veggies before you start cooking.
  2. Heat a large pan or skillet over medium-high heat with oil.
  3. Season shrimp with herbs, salt, and pepper to taste.
  4. Add shrimp to pan and cook for 5 minutes or until opaque. Remove shrimp and set aside.
  5. Add onion and bell peppers to pan. If needed, add more oil.
  6. Cook veggies for a few minutes, and then add sausage and zucchini.
  7. Continue cooking for 3 minutes.
  8. Add the shrimp back to pan. Add garlic and chicken stock for another minute.
  9. Season with salt, pepper, red pepper flakes, or any other seasonings.
Notes
  1. Buy pre-cleaned shrimp as this will save on prep time.
  2. When selecting sausage look for the ones that are nitrate-free.
  3. Whenever possible try to select organic veggies, especially bell peppers as more pesticides are used than other veggies.
  4. To cut prep time, you can buy pre-cut veggies too.
