While it feels like the rest of the country is starting to enjoy fall, Las Vegas is still in the high 90s so my oven is still out of commission. I was however craving roasted chicken this week so I thought I could rework my normal chicken/turkey recipe and make it in the slow cooker. This recipe is great to make in large batches because you can eat the chicken on it’s own or use the roasted pulled chicken for chicken salad, added to soups or any casseroles you’d use a rotisserie chicken for. It’s delicious on it’s own and great the next day.
Slow Cooker Roast Chicken
-1 4-5lb chicken (skin on)
-1 teaspoon Italian seasoning
-4 garlic cloves, minced
-1/2 onion, diced
-1 cup water (or low sodium chicken broth)
-1/4 teaspoon salt & pepper (or to taste)
Rub seasonings evenly on the chicken and then add to the slow cooker. Add the cup of water to the slow cooker trying to avoid rinsing the seasonings off the chicken. Place slow cooker on low and cook for 6 hours or until the chicken is fully cooked. When fully cooked, remove chicken from the slow cooker and enjoy with your favorite veggies, potatoes or throw the shredded chicken into another dish to complete the recipe.
