  1. 1-pound mushrooms, halved
  2. 1 small onion, cut into 8 wedges
  3. 2 tbsp. olive oil
  4. 4 chicken-leg quarters
  5. 1 tsp. fresh or dried thyme leaves
  6. Salt and Pepper, to taste
  1. Toss mushrooms, red onion, olive oil, and fresh thyme leaves in a heavy skillet.
  2. Top with 4 chicken-leg quarters; sprinkle with salt and pepper.
  3. Roast at 450°F 35 to 40 min. or until cooked through (165°F).
  1. This could also be made in a crockpot. Cook on low for 6 to 8 hours or until chicken is cooked to 165°F.
  2. Remember to use an oven mitt when handling the skillet, as it gets hot. I ended up with a crazy burn from grabbing the handle.
  3. Add additional seasonings and spices, to make the dish unique.
  4. This dish pairs well with greens and a olive and vinegar dressing.
